Now that I have my precious Organic Orgain protein powder back…I actually have 2 containers… I decided to whip some into a batch of healthy brownies to up the protein content. And then, I thought, why not…brownies for breakfast!
They are healthy…no sugar. I used 2 ripe bananas for sweetness. Protein…egg, Orgain protein powder, and almond butter. Healthy and a nice chocolatey taste. If you are used to boxed processed sugar laden brownies, then these will not be sweet enough for you. My daughter lathered hers in Nutella and deemed it good. My hubby actually said they weren’t too bad and thought he might like it better dipped in milk if we weren’t currently out of milk. I rarely eat sugar, so the sweetness of the banana and Orgain were enough for me.
The batter before baking…
Breakfast Protein Brownies
2 Ripe bananas
1/2 cup creamy almond butter
1/2 cup Orgain chocolate fudge protein powder
1/2 cup cocoa powder
2 tsp. vanilla
1/3 cup avocado oil
1/2 tsp. baking soda
Process until smooth and well blended. Pour into a greased or lined 8×8 baking dish. Bake at 350 degrees for 20 minutes. Cool before cutting. I was able to get about 12 brownies.
This is definitely not something I would eat every day…too much chocolate equals adult acne…not exactly a favorite reaction of mine. So, I am treating this as a thank goodness it’s Friday treat. Happy Friday!
Missing. No where to be found! My favorite Orgain organic protein powder…no where to be found at Costco…the main reason I braved the crowds.
Costco.com….”Out of Stock”
Vitacost.com…. “Out of Stock”
Orgain.com…. “Out of Stock”
My go-to breakfast…Orgain creamy chocolate fudge protein powder, PB2 powdered peanut butter, Silk Cashewmilk, my vitamin C sprinkles, a drop of Udo’s flax oil…all blended together in my Blender Bottle…keeps me full until lunch.
Orgain is plant-based, delicious, dairy free…so delicoius….apparently I am not the only one who likes it!
I am missing my Orgain….I have a substitute protein powder right now, but I hope I can find Orgain soon! It makes breakfast simple, and I like simple.
Finally, I am sleeping a little better. Yay! I love my Homedics sound machine. The ocean waves lull me to sleep when I have an empty stomach. I am hoping and praying for a week of good sleep before I have a week off work…another yay!
Onto food….Overripe bananas are good for two things…freezing or baking. I love my Orgain protein powder and drink it most days. I decided to try my hand at baking with it. Here’s what I came up with:
Peanut Butter Protein Muffins
2 overripe bananas
1/3 cup Orgain chocolate protein powder
1/4 cup almond milk
1/4 cup maple syrup
1 cup natural creamy peanut butter
Mix together in a food processor until well blended. Pour into muffin liners. Makes 8-9 muffins. Bake at 350 degrees for approximately 20 minutes. They are dense, soft, moist, and fudgey. Great for breakfast on the go or an afternoon pick me up!
Confession….peanut butter is one of those foods I need to be careful with. This recipe could easily use any type of nut butter. These muffins are sweet to me. I don’t eat a lot of sugar. I ended up putting them in the freezer so they weren’t easily accessible to me. I have learned I can tolerate some peanut butter, but too much irritates my stomach. Peanut butter, or any nut butter, is one of my trigger foods. I have to be careful with nut butter, chocolate, and baked goods. More to come on that later…
